BBQ Sauce

So I have this week off of work and yesterday I cooked some ribs for the office.  I also made my own BBQ Sauce and miss Becky at work wanted the recipe..

  • Chop up about 1/4 to 1/2 of a sweet onion.
  • Cover with chili powder and simmer over a medium heat until the onions are good and done.
  • Mix in 1 clove garlic, minced.
  • Add 3 tablespoons Worcestershire sauce, 3 tablespoons vinegar, 2 tablespoons molasses and 1 teaspoon dijon mustard. Continue to cook over medium heat for 5 minutes.
  • Add 1 1/4 cup ketchup, 1/2 cup cold water, 2 teaspoons cornstarch, 2 teaspoons brown sugar and a few pinches of black pepper.  Reduce heat to a low and cook for another 10-20 minutes.

All thats left is to let it set in the fredge over night and your done.

French Toast

I love french toast.  Growing up all that I ever did is eggs and a little bit of milk.  Which is okay, but I wanted to make something with a little more to it.  So I found this recipe..

4 eggs
3/4 cup milk
3 tablespoons brown sugar
1/2 teaspoon ground nutmeg
1 tablespoon ground cinnamon
1/2 teaspoon vanilla extract
  • 4 eggs
  • 3/4 cup milk
  • 3 tablespoons brown sugar
  • 1/2 teaspoon ground nutmeg
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon vanilla extract

I also made some fresh bread (at 2 a.m. up with Marci (Daddy loves you)) Just mix it all together and dip in the bread.  It was yummy.  The only thing I did not like was the syrup.  We have a cheap syrup right now and it was not to good.  But thats okay  :)

Home Made Pudding

This is home made pudding that I made.  It was really good, but I think I did not let it thicken enough.  I’ll know to do it longer next time

1/3 cup sugar

2 tablespoons cornstarch

2 cups milk

2 egg yolks

2 tablespoons butter

1 teaspoon vanilla extract

Put all ingredients in a blender for 1 minute.  Then place in saucepan on medium heat stirring until thickened.

And it will thicken, I was not sure if it would after it cools or when it’s cooking.  But it thickens up during cooking.

Homemade Angel Food Cake

So we celebrated Nyssa’s mom’s birthday this weekend.  I was in charge of desert and given it’s been about 95+ out side everyday I wanted something cool.  I wanted to use berrys too.  So I went with a bowl mixture of Angel Food Cake, pudding, berrys and some whipped cream.

Nyssa told me that a little bit before everyone came over her sister called and asked what I was making.  When she told her I guess she was not to thrilled by the idea.  But, she did end up liking it  :)

I have never made Angel Food Cake before (have not made pudding or whipped cream either) and to be honest I was a little scared of it.  But it did turn out very good.

18 egg whites

2 teaspoons cream of tartar

1 pinch salt

1 1/2 cups white sugar

1 cup flour

1/2 cup confectioner’s sugar

1 1/2 teaspoon vanilla extract

1. Preheat oven to 350 degrees F.  Mix cake flour and confectioners sugar together

2. In a large bowl, whip egg whites with a pinch of salt until foamy.  Add cream of tartar and continue beating until soft peaks form.  Gradually add sugar while beating, and continue to beat until very stiff.  Add vanilla.

3. Quickly mix in flour mixture.

4. Bake for 45 minutes.

5. Turn upside down when cooling

Roger’s Bacon Explosion

So we had a party at my house where we told our parents that we are having a girl.  And I made the Bacon Explosion.  But I did it a little differntly from how they had it.  I did not use Sausage as the filler.  Instead I used rib meat that we pulled apart.  So I used…

1) a boat load of bacon

2) fully cooked ribs

3) BBQ rub & Sauce

So I made the bacon weave seen above.  Then I put on the BBQ rub (I just used some spices that I had in the house) and broke off meat from the BBQ ribs and placed on top of the bacon weave.

Then I rolled it all together, poured BBQ sauce on it and wrapped in aluminum foil.  Stuck the whole thing on the grill over a low heat for about an hour.

It was really good, the only thing is that it did not stay together to good.  But I guess that’s just from using the rib meat instead of sausage.  

Over all a huge hit.  It was great!  I look foward to the next time I can make it..  Maybe my birth day would be a good time…
